PORK SOUVLAKI SKEWERS


Nutritional values per serving:

INGREDIENTS

  • 300g pork fillet
  • 2 tbsp olive oil
  • 1 tsp dried mint
  • 2 tsp dried oregano
  • ½ lemon, juice of
  • 1 clove garlic, crushed
  • 1 tsp sherry or red wine vinegar
  • salt & freshly ground black pepper, to taste
  • ½ tsp smoked paprika

METHOD

  • Trim any sinew from the pork fillet and cut into approximately 2x3cm pieces.
  • Add all the remaining ingredients (except the paprika) to a bowl and whisk together. Add the pork and coat well with the marinade. Cover with cling film and marinate for ½ an hour (an hour is better if you have the time – it will intensify the flavours).
  • Preheat a griddle pan on high heat.
  • Thread the pork pieces onto 4 skewers. Don’t squeeze the pork pieces together so that the heat can penetrate more easily and cook the pork evenly.
  • Cook the skewers in the very hot griddle pan for 8-10 minutes, turning occasionally until done.
  • Remove the skewers from the griddle pan and give them a squeeze of lemon juice, a drizzle of olive oil and a sprinkle of paprika.
  • They are great served with warmed pita breads, tzatziki and a Greek salad.
