BRUSCHETTA with FETA, PEAS & BASIL (V)

INGREDIENTS
- 8 cherry tomatoes, quartered
- 12 basil leaves, chopped
- 1 tbsp extra virgin olive oil
- 1 tsp white wine vinegar
- salt & freshly ground black pepper
- 100g frozen peas
- 60g Greek feta cheese, roughly chopped
- 6 slices sourdough baguette, sliced on the bias
- small handful basil leaves (alternatively rocket leaves)
METHOD
- Add the tomato, chopped basil, olive oil and vinegar to a bowl. Season with salt and pepper and toss.
- Add the peas to a pan of salted, boiling water and cook for 2 minutes. Drain and return to the pan. Add half the feta and mash together.
- Toast the baguette slices. Spread the pea and feta mixture on the toasted baguette slices.
- Crumble over the remaining feta and add the marinated cherry tomatoes.
- Scatter over the basil or rocket leaves.
