TUNA, AVOCADO & SWEETCORN WRAPS


Nutritional values per serving:

calories 301, protein 20.6g, fat 13g (saturated 2.9g), carbs 21.6g (sugar 5.3g), sodium 817mg


INGREDIENTS

  • 1 can tuna in spring water, drained
  • 1 tbsp light mayonnaise
  • 2 spring onions, sliced
  • 80g frozen sweetcorn, thawed (or canned in water)
  • 1 avocado, lightly mashed
  • 2 tbsp low-fat natural yoghurt
  • salt & freshly ground black pepper, to taste
  • 2 large wholemeal wraps
  • ½ red bell pepper, thinly sliced
  • 1 little gem lettuce, leaves separated

METHOD

  • In a bowl mash together the tuna and mayonnaise. Add the spring onions, sweetcorn, avocado and yogurt and season to taste. Gently mix together. Spread onto half of each wrap.
  • Scatter over the bell pepper and add the lettuce leaves.
  • Roll up the wraps and serve.
