SWORDFISH SKEWERS MOROCCAN STYLE

INGREDIENTS


  • 360g thick-cut swordfish, or other firm-fleshed fish
  • juice & zest of 1 orange
  • juice & zest of ½ lemon
  • 2 tbsp (30ml) extra virgin olive oil
  • 1 tsp paprika
  • ½ tsp ground cumin
  • pinch of chilli powder (optional)
  • 2 cloves of garlic, crushed
  • 1 tbsp coriander or flat leaf parsley, chopped
  • freshly ground sea salt & black pepper, to taste
  • 1 – 2 lemons, sliced
  • 2 tbsp chives, sliced

METHOD


  • Add the orange and lemon juice and zest, olive oil, paprika, cumin, chilli (optional) and garlic to a bowl and stir to combine.
  • Cut the swordfish into 2 cm cubes and add to the marinade. Stir well to coat and marinate for a ½ hour.
  • Preheat a griddle pan on medium-high heat. Alternatively grill them on a BBQ.
  • Remove the swordfish from the marinade and shake off excess marinade. Thread onto skewers, adding a folded slice of lemon between each piece of fish. Season with salt and pepper.
  • Grill the tuna skewers on each side for 30 – 60 seconds, according to your taste.
  • Drizzle with extra virgin olive oil, scatter over the chives and serve with orange and lemon wedges.
