CHICKEN BURGER with CRANBERRY SAUCE

INGREDIENTS


  • 2 lean chicken burgers (Heck make a good low fat/calorie fresh burger)
  • 1 tsp smoked paprika
  • salt & freshly ground black pepper
  • 1 tsp olive oil
  • 1 red onion, halved & sliced
  • 1 tbsp (20g) whole cranberry sauce
  • low calorie olive oil cooking spray
  • 2 seeded burger buns
  • 6 stalks chives, sliced
  • 1 tsp Dijon mustard
  • 2 tsp light mayonnaise
  • lettuce leaves of choice
  • thinly sliced cucumber rounds
  • sliced tomato

METHOD


  • Brush the chicken burgers with oil. Season with salt, pepper and paprika.
  • Add the oil to a pan on medium heat. Add the onions, a pinch of salt and pepper and sauté for about 5 minutes, or until the onions have softened and browned. Turn the heat to low and stir in the cranberry sauce.
  • Spray a non-stick pan (or griddle pan) on medium heat with low calorie cooking spray. When hot toast the buns on the cut sides. Set aside.
  • Give the pan another spray and cook the chicken burgers for 8 minutes, turning once, or until golden and cooked through.
  • Mix the mustard and mayonnaise together and spread on both halves of the buns. Garnish the bottom halves with lettuce, cucumber and tomato, and place the burgers on top.
  • Spoon the onion and cranberry mixture onto the burgers, sprinkle with chopped chives and add the bun tops.
