MUSHROOMS with CRÈME FRAICHE (V) (VN)*


Nutritional values per serving:

(VN)* substitutes: olive oil for butter; blend vegan cream cheese with lemon juice & soya milk for crème fraiche

 

INGREDIENTS

  • 1 tsp unsalted butter *
  • 1 clove garlic, crushed
  • 250g chestnut mushroom, halved
  • small handful chives, sliced
  • 2 slices wholemeal bread, toasted
  • 2 tbsp half fat crème fraiche *
  • salt & freshly ground black pepper, to taste

METHOD

  • Heat the butter in a large pan and gently sauté the garlic for a minute.
  • Add the mushrooms and sauté for about 10 minutes, or until tender, stirring occasionally.
  • Toast the bread when the mushrooms are nearly done.
  • Stir the crème fraiche and chives into the mushrooms. Season with salt and pepper if needed.
  • Spoon over the toast and serve.
