MEDITERRANEAN CHICKPEA SALAD – BALELA (V) (VN)


Nutritional values per 2 serving:

calories 275, protein 8g, fat 14g (saturated 2g), carbs 22.6g (sugar 5g), sodium 2.4g


INGREDIENTS

  • ½ can (200g) chickpeas, drained
  • 1 green bell pepper, diced
  • 5 sundried tomatoes, roughly chopped
  • 4 spring onions, sliced 1cm
  • 6 black olives
  • 6 green olives
  • 10 cherry tomatoes, halved
  • 1 red chilli pepper, thinly sliced (optional)
  • small bunch (25g) flat leaf parsley, destalked & roughly chopped
  • small bunch mint, destalked & roughly chopped

Dressing

  • 1 tbsp extra virgin olive oil
  • 1 tsp lemon juice
  • 1 tsp white wine vinegar
  • 1 clove garlic, crushed (optional)
  • ⅓ tsp sumac (substitutes: lemon pepper or ½ tsp lemon zest)
  • salt & freshly ground black pepper, to taste

METHOD

  • Whisk all the dressing ingredients together in a bowl.
  • Add all the salad ingredients to a bowl, season with salt and pepper and toss to combine.
  • Drizzle over the dressing and serve.
