ITALIAN STYLE GREEN VEGETABLES (V) (VN)

INGREDIENTS

  • 4 tablespoons extra virgin olive oil
  • 4 cloves garlic, finely sliced
  • 1 small head broccoli, cut into florets
  • 12 green beans, ends trimmed and sliced in half
  • 10 large Helda beans (flat beans), ends trimmed and sliced in 3
  • 16 mange tout peas (snow peas), or sugar snap beans
  • 1 lemon, juice and zest
  • freshly ground sea salt and black pepper, to taste
  • fresh flat leaf parsley (or soft herb of choice), finely chopped
  • extra virgin olive oil for drizzling

METHOD

  • Place a deep-lipped frying pan or wok on medium-low heat. Add the olive oil and garlic and gently sauté for a minute.
  • Turn the heat up to medium.
  • Add all the vegetables, the lemon zest and salt and pepper to taste.
  • Gently toss the vegetables to coat well with the olive oil and garlic. Sauté the vegetables for about 5 minutes.
  • Turn the heat to high and cover the vegetables with boiling water. Add a generous pinch of salt to the water.
  • Boil rapidly until the vegetables are just done but still a bit crisp.
  • Drain the vegetables and transfer to a serving bowl.
  • Scatter over finely chopped parsley.
  • Finish with a squeeze of lemon juice and a drizzle of good quality extra virgin olive oil.
