CHICKEN SATAY SKEWERS

INGREDIENTS

  • 200 g chicken breast mini fillets
  • groundnut oil
  • 3 tsp massaman curry paste (use Thai Red Curry Paste if you like it spicier)
  • 80ml light coconut milk
  • 1 tsp tamarind paste (alternatively blend 1 tsp lime juice with 1 tsp light brown sugar)
  • 70g (5 tbsp) crunchy or smooth peanut butter
  • 1 tbsp unsalted roasted peanuts, roughly chopped
  • lime wedges

METHOD


  • If you don’t have chicken mini fillets just slice regular chicken breasts lengthways into thin strips. Place the chicken in a bowl, add 1 teaspoon of massaman paste and massage it into the chicken. Preferably set aside for an hour to marinate. Tread the chicken onto skewers and brush with oil.
  • Add the remaining massaman paste to a saucepan on medium heat and cook for ½ a minute before adding the coconut milk, tamarind and peanut butter. Stir in one or two tablespoons of water to loosen if necessary and simmer until reduced to a dipping consistency. Set aside to cool.
  • Heat a grill pan over high heat. Grill the skewers for 5 to 10 minutes, turning occasionally, or until the chicken is nicely charred and cooked through.
  • Serve with a scattering of chopped peanuts, satay dipping sauce and lime wedges.
