BEEF, BELL PEPPER & GINGER STIRFRY

INGREDIENTS

  • 100g broccoli florets
  • 1 tbsp groundnut or canola oil
  • ½ onion, thinly sliced
  • 2 cloves of garlic, finely chopped
  • 3 cm ginger, finely chopped
  • 1 red chilli, finely sliced (optional)
  • 200g lean beef (fillet, rump or sirloin), thinly sliced
  • 1 ½ bell peppers (red, yellow & green), thinly sliced
  • 50ml (3 tbsp) oyster sauce
  • 25 ml (1½ tbsp) soy sauce
  • 15 ml (1 tbsp) rice vinegar
  • 2 tsp sesame seeds
  • 1 lime

METHOD


  • Place the broccoli florets in a bowl and cover with boiling water. Set aside for 10 minutes and then drain.
  • Heat the oil in a wok or large frying pan over high heat. Add the onion, garlic, ginger and (optional) chilli and fry for 2 minutes, stirring constantly. Add the beef and fry for another2 minutes, stirring constantly to brown the beef all over.
  • Add the broccoli and bell peppers and fry for a further 2 minutes, stirring often. Add the oyster sauce, soy sauce, vinegar and toss, or stir, to coat the beef and bell peppers. Cook for another minute.
  • Serve with a sprinkling of sesame seeds and a squeeze of lime.
