BRUSCHETTA with FETA, PEAS & BASIL (V)

Prep Time: 8 minutes

INGREDIENTS


  • 8 cherry tomatoes, quartered
  • 12 basil leaves, chopped
  • 1 tbsp extra virgin olive oil
  • 1 tsp white wine vinegar
  • salt & freshly ground black pepper
  • 100g frozen peas
  • 60g Greek feta cheese, roughly chopped
  • 6 slices sourdough baguette, sliced on the bias
  • small handful basil leaves (alternatively rocket leaves)

 

METHOD


  • Add the tomato, chopped basil, olive oil and vinegar to a bowl. Season with salt and pepper and toss.
  • Add the peas to a pan of salted, boiling water and cook for 2 minutes. Drain and return to the pan. Add half the feta and mash together.
  • Toast the baguette slices. Spread the pea and feta mixture on the toasted baguette slices.
  • Crumble over the remaining feta and add the marinated cherry tomatoes.
  • Scatter over the basil or rocket leaves.
