APPLE & BLUEBERRY OVERNIGHT OATS (V)


Spend a few minutes preparing this the night before and you’re ready to go in the morning!

INGREDIENTS

  • 50g porridge or rolled oats
  • 100ml unsweetened dairy-free milk (almond, hazelnut)
  • ¼ tsp vanilla extract
  • ¼ tsp ground cinnamon, or to taste
  • 200g fat-free Greek yogurt
  • 100g blueberries
  • 20g (2 tbsp) cashew nuts, chopped
  • 2 sweet apples, cored & coarsely grated
  • 10g (1 tbsp) flaked almonds

METHOD


  • Add the oats, almond milk, vanilla and cinnamon to a bowl and stir.
  • To another bowl add the yogurt and ½ of the blueberries. Using a fork lightly crush the blueberries. Add the cashew nuts and grated apple and mix. Add the yogurt mixture to the oats and mix well.
  • Cover the bowl and chill in the fridge for at least 3 hours or preferably overnight.
  • Spoon the oats into two bowls or suitable sealable containers. Scatter over the almonds and top with the remaining blueberries.
