BASIL, LEMON & PARMESAN LINGUINE (V)

 


Nutritional values per 2 serving:

calories 425, protein 12g, fat 28g (saturated 6.8g), carbs 34g (sugar 1.1g), sodium 336mg

(VN)* substitute: omit Parmesan cheese or use vegan alternative


 

INGREDIENTS

  • 200g linguine or spaghetti
  • 3 tbsp (45ml) extra virgin olive oil
  • 1 lemon, juice & zest
  • 3 ½ tbsp (40g) grated vegetarian Italian hard cheese substitute for Parmesan
  • small bunch (about 25g) basil, leaves picked
  • freshly ground black pepper

 

METHOD

  • Prepare the pasta in plenty of well-salted boiling water according to the package instructions.
  • Whilst the pasta is cooking, add the olive oil, lemon juice, lemon zest and Parmesan to a large saucepan on low heat and mix well.
  • When the pasta is done use tongs to remove from the water directly to the saucepan, taking along a little pasta water.
  • Add the basil leaves and toss to combine. If needed add a tablespoon of pasta water to loosen the pasta.
  • Serve with a grind of black pepper, a sprinkle of grated Parmesan and a drizzle of olive oil.
