PESTO OMELETTE with PRAWNS

INGREDIENTS


  • 4 medium free-range eggs
  • 2 tbsp reduced fat basil pesto
  • salt & freshly ground black pepper
  • 2 tsp olive oil
  • 1 tsp butter
  • 6 cherry tomatoes, quartered
  • 80g cooked peeled prawns
  • 2 tbsp fresh basil leaves

 

METHOD


  • Prepare the eggs in two bowls. Crack two eggs and add half the pesto to each bowl. Season with salt and pepper and whisk.
  • Heat a teaspoon of olive oil in a non-stick pan over medium heat. Add a portion of egg mixture to the pan, titling the pan so the egg mixture is evenly spread over the base of the pan.
  • When the egg is starting to set add the tomatoes and cooked prawns. Continue cooking until the omelette has set to your preference. Fold over the omelette and remove to a plate. Cover with foil to keep warm if desired.
  • Repeat with the second omelette.
  • Serve with fresh basil leaves.
