CHIA & FLAXSEED OVERNIGHT OATS with BERRIES (V) (VN)

INGREDIENTS

  • 80g rolled oats
  • 1 ½ tsp ground flaxseeds
  • 1 ½ tsp chia seeds
  • ¼ tsp ground cinnamon
  • 1 apple, grated
  • juice of 1 orange
  • 120ml oat milk or other plant-based milk of choice
  • 150g fresh blueberries & strawberries (or any berries you fancy)
  • 2 tbsp dairy-free yogurt alternative (alternatively plain yogurt for non-vegan)

Optional garnish

  • chopped nuts

METHOD

  • Add the oats, flaxseeds, chia seeds, cinnamon and apple to a bowl and mix. Stir in the orange juice and oat milk.
  • Trim the tops off half the strawberries. Lightly crush the strawberries and half the blueberries with the back of a fork. Add to the oat mixture and mix. Cover the bowl and refrigerate overnight.
  • In the morning trim the remaining strawberries. Dish the oats into bowls and sprinkle with a pinch of cinnamon. Top with a dollop of yogurt alternative and the remaining berries.
