PORK SOUVLAKI with TZATZIKI

INGREDIENTS


  • 200g free-range pork fillet, cut into 3cm cubes
  • salt & freshly ground black pepper

For the marinade

  • juice and finely grated zest of 1 lemon
  • 1 tbsp olive oil
  • 2 tsp dried oregano
  • 1 bay leaf, crushed
  • ¼ tsp ground cumin
  • ½ tsp sweet or hot smoked paprika
  • pinch of cayenne pepper (optional)
  • 1 clove of garlic, crushed

For the tzatziki

  • 100g low-fat Greek yoghurt (fat-free if you prefer)
  • ¼ cucumber, peeled, halved, seeded & grated
  • small handful (about 10g) fresh mint, leaves picked & finely chopped
  • 1 tsp lemon juice
  • 1 small clove of garlic, crushed

 

METHOD


  • If using wooden skewers soak them in water for ½ an hour.
  • Mix all the marinade ingredients in a bowl. Add the meat, coat well and marinate for a minimum of 30 minutes, but preferably an hour.
  • Prepare the tzatziki whilst the meat is marinating. Add all the tzatziki ingredients to a bowl and mix well. Taste and season with salt, pepper and extra lemon juice if desired.
  • Pre-heat the oven grill on high.
  • Thread the meat onto skewers, season with salt and pepper and place them on a lightly oiled baking tray.
  • Grill for 10 to 12 minutes, or until cooked through. Turn the skewers a few times to brown all sides of the souvlaki.
