MUSSELS GALICIAN STYLE

INGREDIENTS

  • 1kg fresh mussels, cleaned
  • 1 tsp sea salt
  • 4 bay leaves
  • 1 tbsp extra virgin olive oil
  • 2 shallots, finely diced
  • 2 cloves garlic, finely diced
  • 1 tbsp plain flour (you can also use gluten free)
  • 100ml dry white wine, preferably Galician Albariño
  • 1 tsp sweet Spanish paprika
  • 1 small bunch parsley, leaves picked & roughly chopped

METHOD


  • If needed clean the mussels by scrubbing the shell and pulling away the “beards”. Rinse with cold water.
  • Bring a 100ml of water to the boil in a large pot over high heat. Add the salt, bay leaves and mussels. Immediately put the lid on and cook the mussels until the shells open, about 3 minutes. Strain the mussels, retaining the liquid. Discard any unopened mussels and return the mussels to the saucepan.
  • To make the sauce heat the olive oil in a large pan over medium heat. Add the shallots and garlic and sauté until the shallots are golden and have softened. Add the flour and stir until the flour is incorporated and nicely browned. Stir in the reserved mussel cooking liquid, wine, paprika and parsley to the pan. Cook for a couple of minutes, stirring occasionally.
  • Add the sauce from the pan to the mussels and cook for 2 minutes, stirring until the sauce has thickened and the mussels are warm.
  • Turn off the heat, place the lid on the pot and let the mussel stand for a couple of minutes before serving.
